Easy Pancake

These easy pancakes are so simple to make yet always taste just right. Topped with maple syrup and butter they are impossible to resist at breakfast.

  • 1 1/4 cup milk
  • 2 cups self-raising flour
  • 2 eggs
  • 1 tsp vanilla essence
  • Maple syrup, to serve
  • 1/3 cup caster sugar
  • Butter, for frying, plus extra, to serve


  • In a jug, whisk together milk, eggs and vanilla.
  • Sift flour into a large bowl and mix in sugar. Make a well in the center. Add in the milk mixture and whisk until combined.
  • Heat a large non-stick frying pan over medium heat. Grease pan with butter or spray with cooking oil.
  • Pour the batter onto the hot frying pan, using 1/4 cup for each pancake. Cook 2 pancakes until brown on both sides (usually 1-2 minutes each side).
  • Transfer to a plate and cover loosely with foil to keep warm.
  • Serve with maple syrup and extra butter.
